Cabbage Slaw

This colorful slaw is a great side dish for any occasion. For a quick prep you can use packaged, shredded cabbage and carrots.

What you need for the slaw:
 4 cups red or green cabbage, finely sliced
 2 carrot sticks, grated
 ¼ cup parsley, minced
 1 green onion, thinly sliced
 2 Small apples, cut into small pieces
 ¼ cup sliced almonds
 3 tbsp apple cider vinegar or lemon juice
 4 tbsp olive oild
 1 tbsp honey
 ½ tsp dijon mustard
 ¼ tsp black pepper
To make the slaw:

Prepare the dressing by whisking together the vinegar, honey, dijon and olive oil together until well combined.

Toss all of the salad ingredients with the dressing and enjoy! This can stored in the fridge for upto 5 days.
