Chicken and Grape Salad

Perfect for picnics, this delicious salad is packed with plenty of crunch. It can be eaten alone as a high protein salad or as a wrap or sandwich.

What you need:
 1 cup cooked chicken, chopped into bite size pieces
 ½ cup celery, diced
 ½ cup green pepper, chopped
 ¼ cup onion, diced
 1 cup grapes, sliced
 ¼ cup mayonnaise
 1 tbsp lemon juice
 1 tsp dried tarragon (optional)
To make the sandwich:

Mix the mayonnaise and lemon juice together and toss with chicken, celery, onions and green pepper. Gently add the sliced grapes.

Add salad to toast, tortilla or pita bread. Can also add lettuce or greens and eat as a salad. Enjoy!
