Chili Lime Dip with Veggies

Give those veggies something to cheer about! This spicy lime dip is perfect for carrots, celery, cucumbers and other raw vegetables.

What you need:
 ½ cup silken tofu
 2 tbsp mayonnaise
 ½ cup jarred roasted red peppers
 1 tsp chili powder
 1 tsp onion powder
 1 ½ tbsp lime juice
 3 tbsp chopped fresh cilantro (may be replaced by fresh dill or parsley)
To make the dip:

Place all ingredients in blender or food processor and blend until smooth (about 30 seconds).


Transfer mixture to a small bowl, cover and refrigerate for at least 30 minutes.


Serve with raw carrots, celery, cucumber or other fresh veggies.
