Macaroni Tuna Salad

This salad is easy to throw together and can be eaten as a side dish or main meal. It will keep in the fridge for up to 5 days.

Making Changes:
For home dialysis: To increase the amount of protein and potassium, try adding a 15oz can of white beans such as cannellini. This provides an extra 5g protein per serving.

Ingredients
 3 cups cooked macaroni or other small shell noodle
 5 oz can tuna, drained and rinsed
 ¼ cup red onion, diced
 ¼ cup parsley
  cup jarred roasted red peppers, diced
 1 tbsp olive oil
 2 tbsp mayonnaise
 2 ½ tbsp lemon juice or vinegar
 ½ tsp Dijon mustard
 of black pepper
Preparation

Cook macaroni according to package

Place tuna in a medium-sized bowl and flake with a fork

Prepare the dressing by whisking together mayo, olive oil, mustard, lemon juice.

Mix the remaining ingredients and toss with the dressing.

Serve cold and top with black pepper. For added flavor, sprinkle with your favorite Mrs. Dash seasoning
