Santa Fe Black Bean Relish

This relish is delicious and easy to make. It is heart healthy, low sodium and perfect with tortilla chips or as a topping on tacos.

 15 oz can of no salt added black beans
 1 cup whole corn kernels (frozen or canned)
 1 medium avocado, peeled, cored and cut into 1/2 inch cubes
 ½ cup roasted red pepper, from a jar, chopped
 3 tbsp lime juice, fresh or bottled
 1 tbsp olive oil
 2 tbsp fresh cilantro, minced
 2 garlic cloves, chopped
 ½ tsp chili powder
 ¼ tsp ground black pepper

In a bowl, combine the black beans, corn, avocado, and red pepper.

Combine the lime juice, olive oil, cilantro, chili powder, black pepper and garlic together in a jar with a secure lid, shake together until mixed well and pour over the black bean pepper mixture.
