White Bean Spinach Artichoke Dip

This quick and easy dip is a wonderful addition to a party, potluck, or a quick snack at home. Serve with vegetables, pita bread, or crackers.

 2 tsp olive oil
 3 garlic cloves, chopped
 ¼ yellow onion, chopped
 ½ tsp fresh thyme, de-stemmed
 ½ cup loosley chopped spinach
 8 oz cream cheese
 14 oz can of no salt added great northern white beans
 14 oz can of low sodium quartered artichokes
 ¼ cup parmesan cheese
 ½ tsp finely minced fresh rosemary
 ¼ tsp black pepper
 juice from 1/2 medium lemon (about 3 tablespoons)

Heat oil in saucepan on medium heat. Cook garlic, onion, and thyme until lightly translucent, about 1-2 minutes.

Add spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.

In a blender or food processor combine cream cheese, beans, and lemon juice. Blend until completely smooth.

Add spinach mixture, artichoke hearts, Parmesan cheese, rosemary, and black pepper to blender. Pulse to combine.

Transfer to a baking dish and bake on 350F for 20 minutes.
